Mum’s solution to quick, easy & nutritious meal times

Life as a Mum is hectic.

Having three children in three years is time consuming to put it simply, so anything I can do to save me time is vital.

Meal times are time consuming on so many levels. First deciding what to make (usually everyone wants a different meal), then preparing and cooking it, which creates mess and pots/dishes, plus then cleaning up after the food fight that almost always happens.

I’ve found an easier solution to meal times…batch cooking and microwaving individual meals to save time and mess.

I am passionate about using fresh ingredients and making sure my children eat their five a day, but as I’ve said before it is pretty time consuming. So instead of cooking from scratch every night, I make one big batch and freeze the meals in microwave-safe tupperware boxes. The ingredients inside stay fresh and when I reheat them in the microwave the meal is just as fresh as the first time I made it.

The favourite meals/snacks my little ones love are:

Spaghetti Bolognaise (with hidden veggies in the sauce)

Homemade sweet potato wedges (with hidden carrot shavings)

Microwavable bags of mixed veg (I usually buy ASDA’s own brand)

Sausage Casserole

Hotpot/Stew

Mashed Potato (I use a mixture of white & sweet potato)

Meat (I tend to buy freezer meat or freeze left over fresh meat)

Shepherds Pie

Homemade Pancakes

Homemade Cakes/Biscuits

Fruit Smoothies (I blend the fruit up and then freeze it in bags ready to defrost and drink)

These are just a few of my children’s favourite meals that I batch cook and then freeze so I can easily reheat them without making a huge mess and taking hours of cooking every night. You can batch cook and freeze most meals, of course when reheating meat be extremely cautious and ensure it is safe to eat.

Plus if you are using one of the Panasonic Combination Microwaves you can choose to steam, grill, bake or simply microwave your food.

It really is a simpler solution to meals times, making life easier for us busy Mums. Which means we get more time to spend with the kids than in the kitchen yet they still get the nutritious meals we want to give them.
